Môj názor Last night = past simple (skončená minulosť, už ho poznám).

I agree that simple past “… didn't know until ..” is right here. “Hadn't known” is acceptable, but unnecessarily clumsy here. It's something to do with the verb “know” describing a state, not an action.

I hadn't seen that man until he knocked on my door last night. didn't see that man until he knocked on my door last night. I hadn't met that man until he knocked on my door last night. didn't meet that man until he knocked on my door last night. I hadn't eaten frogs' legs until we went to the restaurant that night. didn't eat frogs' legs until we went to the restaurant that night.
